Lemongrass-Five Spice Marinade

Fragrant - it's how I would describe this Vietnamese inspired marinade.


Contents:

How to Use:

4 chicken legs
1 packet of Lemongrass-Five Spice Marinade

  • Make incisions in the chicken legs and prick all over with a fork
  • Marinade with 1 packet of Lemongrass-Five Spice Marinade for 4 hours or overnight.
  • Grill until charred on both sides.

Almond Sambal

How to Use:

1 whole fish (about 500g)
Salt
Lime juice

  • Score both sides of the fish and marinade with salt and lime juice for 15 mins.
  • Grill the fish until done.

Peri Peri Marinade and Peri Peri Sauce

How to Use:

1 broiler-fryer chicken

  • Make incisions in the flesh and prick all over with a fork.
  • Brush both sides with 1 packet of Peri Peri Marinade and sprinkle with rock salt.
  • Cover and marinate in the fridge for a few hours.
  • Grill while turning and basting continuously until golden brown.
  • Cut the chicken into pieces and brush with Peri Peri Sauce.

  • Slice the vegetables and salt them.
  • Sun-dry for half a day.
  • Blanch the vegetables one at a time in boiling vinegar solution
  • Toss with ingredients A.

Cantonese Mooncake Skin
